We’re famous (or infamous, you decide) at this point for trialling our best possible hop combinations here at Polly’s in a chuggable pale ale to get a feel for how the little idiosyncrasies of our most complex ingredient work off one another when paired up. This is no different on Cool Selector – a pale ale that had one word and only one word next to it during the planning process – TROPICAL! Wanting to employ a dry hop bill to create a beer that punches way above its 5.3% strength, this pale is positively loaded with stateside slammers Mosaic, Talus and Sabro, with Australian powerhouse Ella employed for a little South Pacific flourish. A stacked flavour trip of juicy tangerines, peaches, backed up with coconut and fresh cut citrus fruits makes up this pale ale that is a perfect accompaniment to see off the final throes of summer.
